Sole with Garlic Butter, Lemon & White Wine Sauce

Sole with Garlic Butter, Lemon and White Wine sauce a healthy, delicious meal that comes together in minutes. Sole is a really light and delicate white fish that I only see in the case at our local fish market once in a while. It’s not a very fishy tasting fish, which makes it a good option if you’re new to seafood or just don’t like a strong fish taste. The filets are thin so they will be done really quickly.

Sole filets

First, I start with the garlic and butter in a non-stick pan. Give the pan 2 swirls of olive oil and 1 tablespoon of butter. When the butter stops making the sizzling sound it’s time to add your garlic and lemon. This is 2 large cloves of garlic and 1/2 lemon sliced.

When the garlic becomes fragrant add 1/4 of white wine – whatever you like to drink – to your pan and let it begin to bubble and reduce to make your garlic butter, lemon and white wine sauce. I’m using Sauvignon Blanc in this recipe.

While the wine reduces season your fish lightly with kosher salt and coarse black pepper.

After your wine has reduced by about half it’s time to start cooking your filets in your delicious garlic butter sauce. I have 1 lb. of fish and I needed to do them in batches. I put my oven on warm and put the cooked filets on an oven safe pan while I cooked the rest of the filets.

Once you put your fish in your pan do not leave the stove! These super thin sole filets will only need 4 minutes – maybe less depending on the thickness.

Drizzle the remaining Garlic Butter, Lemon and White Wine sauce over your fish and top with some roughly chopped parsley.

My fish is so light and tender that it actually fell apart taking it out of the pan. Instead of making it again I’m posting it anyway.

Ingredients
  

  • 1 pound sole (or other delicate white fish)
  • 1 tbsp unsalted butter
  • 1/4 cup white wine I use Sauvignon Blanc
  • 1/2 lemon sliced
  • 2 garlic cloves minced
  • extra virgin olive oil
  • fresh parsley for garnish

Instructions
 

  • Heat 2 swirls of olive oil and 1 tablespoon of butter in a non-stick pan over medium heat
  • When butter stops sizzling add your garlic and lemon slices
  • When the garlic becomes fragrant add your white wine and let it reduce by half
  • Meanwhile, season your sole filets lightly with salt and pepper on one side
  • Add your sole filets to the pan and cook until the meat becomes opaque – this happens fast, maybe about 4 minutes (you will likely need to do this in batches)
  • Place your sole filets in a warm over while you cook the rest
  • When serving your sole drizzle the remaining lemon, white wine, garlic butter sauce in your pan over your filets and sprinkle with chopped fresh parsley
