Sole with Garlic Butter, Lemon & White Wine Sauce
Sole with lemon, white wine, garlic butter sauce is a healthy delicious meal that comes together in minutes.

- 1 pound sole (or other delicate white fish)
- 1 tbsp unsalted butter
- 1/4 cup white wine I use Sauvignon Blanc
- 1/2 lemon sliced
- 2 garlic cloves minced
- extra virgin olive oil
- fresh parsley for garnish
Heat 2 swirls of olive oil and 1 tablespoon of butter in a non-stick pan over medium heat
When butter stops sizzling add your garlic and lemon slices
When the garlic becomes fragrant add your white wine and let it reduce by half
Meanwhile, season your sole filets lightly with salt and pepper on one side
Add your sole filets to the pan and cook until the meat becomes opaque - this happens fast, maybe about 4 minutes (you will likely need to do this in batches)
Place your sole filets in a warm over while you cook the rest
When serving your sole drizzle the remaining lemon, white wine, garlic butter sauce in your pan over your filets and sprinkle with chopped fresh parsley
